Coriander and Mint Chutney with Bajji

Bajji or Pakora is one of the famous snack in India. I love the Bajjis from the road side shops and I never miss it when I come across one. This time, when I went to India, I came across a Bajji shop in Adayar outside “Life Style”. They sell awesome bajjis, vada, samosa, poli, etc. It was lovely. I went there almost everyday. In my hometown, during the “Car Festival” there will alot of shops selling these bajjis. But there is one particular shop which has chilly bajji with a special chutney. I am sure people just go there for this yummy chutney. This time when I went there, I just went to the shop keeper and asked him for the recipe of the chutney. I think that was my day that I got the recipe and I am here sharing it with you. Here you go…
Ingredients:
- Mint leaves - 1/2 cup
- Coriander leaves – 1 cup
- Garlic cloves – 3
- Ginger – 1/2″
- Fresh tamarind (no seeds) – 1 tbsp
- Coriander seeds – 1 tbsp
- Cumin seeds – 1 tsp
- Dried red chili pepper – 3
- Coriander powder – 1/4 tsp
- Sesame oil – 4 to 5 tbsp
- Salt to taste
Method of Preparation:
- Heat 1/2 tsp of oil in a pan and add coriander seeds, red peppers and cumin seeds.
- Once they splutter, remove from heat and let it cool.
- Add them to a mixer grinder along with mint leaves, 1/2 cup of coriander leaves, garlic, ginger, tamarind and grind to a smooth paste.
- Heat sesame oil in a pan and add the ground mixture and the remaining coriander leaves along with coriander powder.
- The raw smell goes off and the paste thickens.
- By the time, remove from heat and serve with bajjis.
Quick Bajji Preparation:
Ingredients:
- Any vegetables – Potato, chilli, eggplant, chayote, etc
- Besan/Gram flour – 1/2 cup
- Rice flour – 2 tbsp
- Baking soda – 2 pinch
- Chilly powder – 1/2 tsp
- Salt to taste
- Oil for frying
Method of Preparation:
- Mix all the above ingredients except vegetable. Add water and make a thick paste.
- Leave it aside for 10 minutes.
- Now slice the vegetables or cut them as you desire.
- Heat oil in a pan.
- Dip the veggies in the batter and drop it in the oil.
- Turn both the sides and remove from oil once it become slightly brown or once the bubbles goes off.
- Bajji is ready.

Serve hot with chutney.
