Carrot kheer

It’s been a long time since I made sweets. I don’t make it often because my husband don’t like sweets. But today I was desperate about making a sweet for myself. I had a lot of carrots sleeping in my refrigerator. So I thought I can make a kheer with carrots. It really came out well that my husband loved it. What a surprise!!

Ingredients:

  • Medium size carrot - 4
  • Milk -4 cups
  • Sugar - 3/4 cup (adjust to taste)
  • Cardamom - 2
  • Grated almonds - 3 tbsp
  • Cashew nuts - hand ful

Method of preparation:

  1. Bring milk to boil. Reduce the flame and keep on stirring till it become 2/4 of the quantity
  2. In between, cook the carrots and grind it to paste along with cashews
  3. Add sugar and ground cardamom to milk and stir constantly till it becomes 1/4 of the quantity
  4. Now add the carrot paste to milk and increase the flame. Mix well
  5. When it starts boiling, remove from heat and add the almonds to it
  6. You can also add raisins if you like.

Carrot kheer

:) Serve chill or at room temperature

    Great recipe, great color. You had patience to reduce the milk. I use evaporated milk instead. A great taste that is too addictive. I have to try adding almonds next time I make this. Thanks for shairng your recipe.
