the vadas look hard, bcos it is not soaked in water after removing from oil. Soak the hot vadas in water and squeeze out the water and oil. Keep it as it is and when you want to serve it, put it in the curd mixture. Also, in the photo, the vadas are just coated with dahi and not dipped. It needs to be dipped in dahi.
