Banana Bread Recipe

I have a special place for banana bread because this is the first recipe that got me in to baking. Banana bread makes an excellent snack to go with evening tea or coffee or even as dessert. I have adapted this recipe from epicurious and added a little bit of my style in it. If you do try this recipe I would love to know how it turns out . This is a great beginner baking recipe if you would like to wet your feet in the wonderful world of baking.

Ingredients:

  • All purpose flour :11/2 cups
  • Baking Powder : 1tsp
  • Baking soda : 1/2 tsp
  • Ground Cinnamon : 3/4 tsp
  • Granulated sugar : 3/4 cup
  • Unsalted butter (at room temperature) : 2 tbsps
  • Egg white : 1 (large)
  • Whole Egg : 1(large)
  • Banana Puree : 1 cup ( From  two ripe Medium Bananas )
  • Sour cream : 1/2 cup (regular or low fat)
  • vanilla Extract : 1/2 tsp
  • chocolate chips: 1/3 cup
  • Coffee Liquor : 2tsp (optional)

Method of Preparation :

  1. Butter a 8 1/2×4 1/2×2 1/2-inch loaf pan or bundt cake pan. Preheat the oven  to 350degree F .
  2. Mix together the flour, baking powder, baking soda, and ground cinnamon in a bowl . Now add sugar in it and mix it well.

  4. In an another bowl mix together the butter, egg white, whole egg, banana puree, sour cream , vanilla extract and coffee liquor (optional).
  5. Now make a deep hole in the middle of the flour and pour the above mixture into it by gently mixing it with a spatula.

  7. Now add the chocolate chips and mix all the ingredients gently . Stop stirring when any traces of flour disappear .
  8. If your are using an  electric mixer  mix it with low speed until all the dry flour is blended in.
  9. Pour this mixture in to the prepared pan and bake for 40 minutes or until it fluffy and completely done.

  11. After that remove it from the oven and dust some flour on top of the bread and cool it for couple of hours.

Note:

You can add vegetable oil instead of butter in this recipe it still tastes good.
