Curry leaves are the essence of South Indian cooking. They give rich favor & aroma to any dish and they are used in a lot of recipes. Its usually used as a seasoning but here is a recipe with curry leaves as the key player.
One of my good friends Lavanya of famed Home Cook Recipes sent me this recipe to publish here with some wonderful pictures. She was my classmate & roommate in college. I am really glad that she sent us this and it is with pleasure I share this with you. She made this dish and she said it came out very well and she is as excited as me to share it to our readers.
Ingredients :
- Curry leaves : 1 cup
- Toor dal : 1tbsp
- Channa dal : 1 tbsp
- Urad dal : 1tbsp
- Garlic : 2
- Grated coconut : 1/4 cup
- Whole Red chili : 2
- Asafoetida powder : 1/4 tsp
- Turmeric powder : a pinch
- Sesame oil : 5 tbsp
- Mustard seeds : 1/4tsp

Method of Preparation:
- In a wide skillet roast the curry leaves until it becomes crisp without adding any oil . Fry it in a low flame.
- When it turns crispier transfer it into a plate.
- In the same skillet fry the whole red chili’s, dals (toor dal, channa dal, urad dal), garlic and grated coconut.
- Now grind them along with the roasted curry leaves.
- Don’t make it a fine powder. Let it be coarse. Keep it aside.
- Heat oil in a pan and then add mustard seeds. When it sputters, add asafoetida powder and the ground powder.
- Now add little water and the turmeric powder.
- Let it boil until it thickens in consistency and the oil separates in it’s sides.Then remove it from heat.
Serve it hot with idli, dosa, rice& rasam.

Oh goodness, I am crazy about curry leaves…I will just sit and smell them when I get them, and the flavor is sooooo good! I have got to try this!

I love Chutneys and Pickles, and search for different methods to prepare them. Curry leaves Chutney looks yummy. Thnx for sharing..
