Banana Nut Muffins

I tried muffins for the first time and they came out so perfect. All my friends loved it. I adapted this recipe from food network and made some modifications. More christmas cookies, breads and cakes are coming in Spicy Tasty.

No of Servings : 16


  • All purpose flour – 2 cups
  • Baking soda – 1 1/2 teaspoons
  • Salt – 1/4 tsp
  • Bananas – 4
  • Brown sugar – 1 cup
  • Unsalted butter(melted and cooled) – 3/4 cup
  • Eggs – 2 (room temperature)
  • Pure vanilla extract – 1tsp
  • Walnuts – 1/2 cup (chopped and roasted)

Method of Preparation:

  1. Mash 2 bananas with fork and keep it aside.
  2. Roast the walnuts in oven for 8 minutes and keep it aside.
  3. Combine the flour, baking soda and salt and keep it aside.
  4. Beat the remaining bananas and sugar with electric mixer until smooth.
  5. Add the eggs, vanilla extract and melted butter and beat well.
  6. Now mix the flour mixture and beat until combined.
  7. Add the roasted nuts and mashed bananas and mix them with a spatula.
  8. Preheat the oven to 375 F and butter the muffin tins or line it with muffin cups.
  9. Fill the cups till halfway and bake them for 20 minutes or until a toothpick inserted in the center comes out clean.
