Okra Fry

Okra/vendakkai fry is most popular side dish in south India. Okra is a love or hate thing for many. Some people love em (me) and some people hate em (hubby). But, if you are looking to convert those who hate it, Okra Fry is probably your best bet. Okra fry would make for a great side dish for a variety of rice dishes. My recipe is a simple and easy version, you can make it spicy and crispy and it will go great with Sambar/Rasam.

Ingredients:

  • Okra/Ladies finger : 2 cups (sliced into small discs)
  • to thin circles)
  • Onion : 1 medium
  • Green chilies : 4
  • Curry Leaves: 6
  • Salt : required to taste
  • Oil : 3 tbsp
  • Yogurt : 2 tbsp
  • Urad dal : 3 tsp
  • Mustard seeds : 2 tsp

Method Of Preparation :

  1. Heat oil in a pan add the seasonings (mustard seeds, urad dal) when it sputters add the curry leaves,  onions, green chilies  and  fry them till it becomes translucent.
  2. By the side in another pan just shallow fry the okra with a tsp of oil for 4 minutes.
  3. Now in the onion pan add the fried Okra mix it gently, add the yogurt and required salt mix it all together.
  4. Cover the pan with lid and let them cook in medium heat until the okra is fully cooked and  tender.
  5. When its completely dry remove them from heat and you can sprinkle some split dahliya powder(optional) on top of it.
  6. Serve it hot with chapathi or roti.

    Shriya..This is a beautifull picture i must say!! Adding yogurt is a different tip for me. Next time, when u try, add some Rice Flour or Gram Flour(2tsp). it will surely enhance the taste.

    The dish looks so good, but have to admit i am not a okra fan.

    Looks yummy! Even in our house I like okhra while hubby doesnt :(
