Ingredients:
- Urad dal - 250 g
- Green chillies - 2
- Pepper - 1 tsp
- Ginger (finely chopped) - 1 tsp
- Salt to taste
- Curry leaves - a few
- Oil for frying
Method:
- Soak urad dal in water for 1 hour
- After an hour, drain the water and grind the dal to make a soft paste. (According to the size of your grinder, you can divide the dal into a required number of portions and then grind it)
- While grinding add the green chillies, salt and a little water
- Once it becomes a soft paste, transfer the contents to a bowl
- Grind the pepper coarsely and add to the paste along with curry leaves and ginger
- Heat oil in a pan
- Take a greased sheet and place a small portion (lemon size) of the paste on it.
- Flatten into round shape and make a hole in the centre like a dough nut
- Slowly drop it into the pan so that the shape remains the same
- Repeat the same procedure and add two to three vadas into the pan according to the size of the pan and quantity of oil.
- Deep fry over medium heat until it turns golden brown and crispy
- Remove it and put it in a bowl with absorbent paper to remove excess oil
Serve hot with coconut chutney/ sambar.
Tips: You can soak urad dal in hot water for 20 mins to half an hour in a hot pack if you run short of time.
